For the proffessions you can pretty much choose however you please, there are some more suited to hunter playstyle and stat stacking though. Here are my preffered proffessions for hunters.

Engineering is a very nice prof. for a hunter as it will give you the best agility back enchant and a nice haste proc on your gloves. also the nitro boots can get you in and out of range nice and fast. however this is not the best for dps statwise, it will add to your dps overal due to the haste. Also it will help the hunter with saving gold on arrows/bullets.

Jewelcrafting is simply put the best prof. for any class, it offers you the abilty to make 3 dragon gems and those have nicely increased stats. for hunter's this can be +34 armor penetration or +34 agilty per gem. equalling to +42 overall to any stat you want.

Blacksmithing i put on as well, for when you want to just stack stats and not take engineering. Blacksmithing comes with 2 extra sockets and you can gem them however you want. resulting in +40 stat overal.
