In my opinion these are the only gems you will ever need (besides the jewelcrafting prof dragonseye gems) to activate your meta, reach your caps and min/max your stats. I would advice NOT to gem for socket bonus unless it would be beneficial.

On to the enchants, for this i will assume you have engineering as one of your proffesions.

head: 50 attack power + 20 critical strike rating (Ebon hold rep)

Shoulder: 40 attack power + 15 critical strike rating (Sons of Hodir rep)

Cloak: 23 agility (engineering)

Chest: +10 all stats 

Wrist: 50 attack power 

hands: Haste 340 for 12 sec with 1 min cooldown (engineering)

Waist: Eternal belt buckle +1 gemsocket 

Legs:  75 attack power 22 critical strike rating

feet: Nitro boots (engineering)

Weapon: 110 attack power

Ranged: heartseeker Scope 40 ranged critical strike

Rings can be enchanted when you are an enchanter, 40 attack power enchants on both in that case.
